Vegan Banana Muffins

Ingredients:

  • 4 ripe bananas
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamom powder
  • 3/4 teaspoon salt
  • 1 cup whole wheat flour
  • 1 1/2 cups white flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Directions:

  1. Heat up your oven to 350 and grease muffin tines.
  2. Mash the bananas in a mixing bowl and add in the sugar, cardamom, cinnamon and salt.
  3. Stir in flours, baking soda and baking powder. Blend well.
  4. Fill muffin cups with the batter and bake in the oven for about 20-25 minutes or until done.
