9 Make ahead Lunches

Not another vending machine lunch

On an average we spend around $2,746 on lunch per year.  Wouldn’t it make you happier to save that money for a vacation or spend it on something else equally happy?

The solution to this of course is taking lunch to work. But lets be honest you can only eat leftovers so much until your just pure sick of it. I’m not a leftover person.

So what’s the solution? Make ahead Lunches. Lunches that are both healthy and taste great.

But the best part is that your make ahead lunches will save you money!

Lets get started with some goodness.

Everyone loves a good wrap.

Wraps are so popular because they are easy to make and travel well. You can make them with leftovers from dinner or specialty meats and cheeses; well just about anything you can think of.

Wraps are pretty much on par with salads in the battle of sexy lunch dishes. Bust out of the boring wrap rut with this sweet and savory combination: sweet potatoes coated with pesto, rounded off with caramelized onions, oven roasted cherry tomatoes, and Parmesan. And better yet, make two weeks’ worth and stock up your freezer!
