Join the Cloud Bread Craze

So I was on Pinterest and discovered Cloud Bread or as some call it Oopsie Bread.  I’ve had Crohns for 31 years and I think it’s because of it that I’m obsessed with food. There are too many times that I either can’t eat or can’t eat what I would like to eat because of it. I spent 9 months in the hospital hooked up to a TPN (total parental nutrition) line. My favorite channel was the Food Network.

So when I find recipes that promise they taste good, easy to make, and my gut can handle, I’m all over it.  I made this Cloud Bread per the recipes that I found and like anything else I had to go and add to it.

Basic Cloud Bread Recipe:

  • 3 Eggs separated egg yolks in one bowl egg whites in another
  • 3 Tablespoons or 2 oz. of Cream Cheese
  • 2 teaspoons Sugar or 1 packet of sweetener
  • 1/4 teaspoon Cream of Tarter
  1. In one bowl whip egg whites and cream of tarter until soft peak forms.

2. In separated bowl mix egg yolks, cream cheese and sugar.

3. Slowly fold egg yolk mixture into the egg meringue careful not to deflate the egg whites.

4. Using either a large spoon or measuring cup put mix in med to large rounds onto a sheet pan lined with parchment paper and sprayed with cooking spray.

5. Bake in 300 degree oven for about 25-30 minutes. The time will vary depending on your oven.

Take out let them cool completely. If you can wait overnight they set up even better then.

Have fun with the recipe. I added Garlic powder to the egg yolk mix and Dried Basil on top before baking.. Yum Garlic Cloud Bread!
